Uji Signature features a blend of two cultivars:
Gokou: Known for its savoury depth and gentle umami character, it adds richness to the blend.
Yabukita: A widely celebrated cultivar, it contributes balanced sweetness, fresh green notes, and a crisp finish.
By blending these two cultivars, Uji Signature delivers a light, naturally sweet matcha with minimal bitterness, making it enjoyable for both newcomers and seasoned drinkers.
Preparation
Water temperature: 80°C
This matcha can be enjoyed as koicha, usucha, or with milk. Given its light bodied profile, Uji Signature shines in traditional usucha preparation, revealing the delicate umami notes. It also pairs well with milk — simply adjust the matcha amount to suit your taste for a richer latte experience.

ORIGIN
Our Uji Signature is harvested in Uji, Kyoto during the first spring harvest of the year.
The leaves are shaded for 20 to 30 days using a “tana” (canopy) over the tea leaves. This method of shading limits sunlight to the tea plants, allowing the leaves to develop higher levels of L-theanine and a vivid green hue due to increased chlorophyll content.
TASTING NOTES
Uji Signature has fresh, vegetal notes and a natural sweetness, making this matcha approachable for first time drinkers. The texture is smooth with a soft, round mouthfeel and balanced umami flavour.
